Deli Dip {recipe swap}

Or submarine, hoagie, hero, grinder or whatever you want to call it!


Delicious for a brunch or football weekends!


{Not pictured are onions & oregano}


Deli Dip

½ Pound of ham
½ Pound of salami
½ Pound of provolone
½ Head of iceberg lettuce
3 Small tomatoes
½ Cup of mayonnaise
½ Cup of oil & vinegar combo
(I used Boars Head Deli Dressing, but you can make your own)
Oregano (to taste)
Sat & Pepper (to taste)
1 Large baguette (sliced into ½-inch thick slices)

Layer/stack cold cuts and chop into ½ inch squares.  Chop onion, lettuce and tomatoes very fine.  Combine cold cuts and vegetables in a mixing bowl.  Whisk mayo, oil and vinegar and add to cold cuts/veggies.  Mix well, adding spices to taste.  You may adjust the mayo/oil and vinegar combo to taste as well.  The above measurements worked well for mine.  *Cover and refrigerate for an hour or so.  Serve with sliced bread.

* This is not a recipe to make days ahead.  A couple of hours if fine, but serve same day, otherwise lettuce will get funky.

Weekend Update

Brennan is almost 4...


Sweet boy xo! 


Lots of sugar, whatever he wants.


We have multiple soccer games, an octoberfest BBQ, yard work and a birthday dinner going on this busy weekend. Perfect timing for a cold. I got carded buying cold medicine yesterday. Weird.


Also, the electrician is coming to hang my fixture for the one room challenge. Less than 3 weeks left!

Butter Bars {recipe swap}






Butter Bars

1 Box yellow cake mix
1 Stick of butter, softened
4 Eggs
1 Box (16 oz.) powdered sugar
1 Block (8 oz.) cream cheese, softened

Heat oven to *350

Combine cake mix, butter and 2 eggs.  Mix well and press into a lightly greased 9x13 cake pan. 

Prepare topping:  Combine powdered sugar, 2 eggs and cream cheese.  Spread mixture over cake batter.

Bake 40-45 minutes.  Cool and cut into squares.

Prepare milk!

Hutton Home Office {ORC week three}

Don't you just love Fall?


Light fixture came in ~ waiting for electrician.


Going to get the kids involved with the room.  Blank canvases and craft paint in shades that match the rug.


A small closet door embellishment.  Subtle, as I don't want to make the room too busy. {Sneak peek below}


Accessories - Check.


Chair from Home Goods. Still trying to figure out what to do/hang in this alcove.  Decorative or practical; I have faith it will all come together.


Shopping my house for items for my room. Additional seating or a place to set a drink.  While slightly stressful, this challenge is too fun.  I'm really enjoying checking out the amazing talent involved.

My Tips:  

Get the kids involved - have them make an art project.  $12 for blank canvases, paints and brushes.  The finished, signed & dated artwork = priceless.

Shop clearance.  Most of my items are clearance, online specials or coupon sales.  My PB light fixture after rewards coupons was $29.

Shop your home.  Swapping decorative items from room to room is a breath of fresh air.

Italian Brunch Casserole {recipe swap}







Italian Brunch Casserole

1 (16-ounce) Package sweet Italian sausage
1 Cup of sliced green onions (about 8 onions)
1 Zucchini, diced (about 3 cups)
1 Jar (7 oz.) roasted red peppers, drained and chopped
1 Loaf of Italian bread, cut into 1-inch cubes (about 8 cups)
2 Cups sharp cheddar cheese, shredded
8 Large eggs
1 ½ cups of milk (I used fat free half and half)
Salt & Pepper, to taste

Remove and discard casings from sausage.  Cook sausage in a large skillet until meat crumbles and is no longer pink; drain sausage on paper towels.

Add green onions and zucchini to skillet and sautĂŠ for 5-7 minutes or until veggies are tender.  Stir in roasted red peppers and sausage.  Drain and cool.

Spread 4 cups of bread cubes in a lightly greased 13x9-inch baking dish.  Top with half each of the sausage mixture and cheese.  Repeat with remaining bread, sausage/veggie mixture and cheese.

Whisk together eggs and milk.  Pour egg mixture over bread.  Cover and chill overnight (or 8 hours).

Bake, covered, at 325* for 1 hour or until bubbly and hot.
