Crockpot Chicken Chili {Let's Eat Recipe Swap} and Catching Up!




I'm Back!! After a little sabbatical....I don't know where the months of January & February have gone....Is it just me?!

My photo skills are lacking, but don't that deter you from this easy, healthy & DELICIOUS recipe.  Here's my take on a recipe that's been all OVER blogland....

Crockpot Chicken Chili

2 Chicken Breasts (not thin-sliced)
1 Can Red Kidney Beans (drained & rinsed)
1 Can Corn (undrained)
2 cups of Salsa
1 Package Hidden Valley Ranch Dressing Mix
1 Teaspoon Cumin
1 Tablespoon Chili Powder
1 Teaspoon Onion Powder
1 Block of Neufchatel Cheese (or Reg. or FF Cream Cheese)
A few shakes of Hot Sauce (to your taste...)

Lay chicken breasts on bottom of crockpot.  Mix beans, corn, salsa and all dry ingredients and pour on top of chicken. Dot the top of mixture with chunks of neufchatel cheese.  Cover with lid and cook on low for 6-8 hours.  Stir neufchatel cheese into chili.  Shred chicken with two forks and if you'd like add the hot sauce at this point.  Serve...it's that easy!

Hope all of my followers are doing well.  I'm hoping things will slow down and I can catch up {yeah right!}

Since I've been away:  I've become an Aunt to the most beautiful baby boy...Samuel Michael. My mom had a health scare {all is well now}.  We finally settled with our insurance company on our Hurricane damage, so renovation starting soon {YAY!}.  I completed our chalkboard wall {pictures and mixed feelings about THAT to follow}. 

My husband is participating in our local Polar Bear Plunge tomorrow.  He decided to do it last minute and raised over 1K in a week.  It might have helped that he used sleazy salesman tactics (something about free beer and speedo pics).  You know what; whatever it takes, it supports the Special Olympics and our area has already raised 1.3 Million Dollars.  Slightly worried about the weather, while it could be worse, it will be 45 Degrees and 50 MPH winds....can you say sandblasted?!  I will be watching from the boardwalk, warm drink in had!  See my post about last years plunge here:  http://coastalpines.blogspot.com/search/label/2011%20Polar%20Bear%20Plunge
